Be sure to use the good mezcal. Spoiler alert - all mezcal is good mezcal. If it isn't good, it isn't mezcal.

Mr. Tower. J’adore vos recettes sans comparaison ! But do tell what type of flavor of mezcal would you put in your custard...a steamed chicken one? Thank you in advance, James

Not sure where the steamed chicken comes from, but a regular mezcal and not an anejo. The custard here is a creme anglaise.
