Wonderful interview! I was inspired as well by JT's cooking at Stars in the 80's as a young chef and budding restaurateur. After moving from SF to Atlanta in 86, a return trip led me to Stars and I was blown away. The scene, the menu & food, the service, the style and that undeniable energy was palpable and riveting! Either that visit or a subsequent visit, I purchased a copy of New American Classics and read it cover to cover on the flight back to Atlanta. I wanted to cook everything in the book! I also, was in awe when I saw the Dewar's profile billboard on the way to the airport. Thank you for your inspiration and continued wisdom and philosophy on food and cooking.
PS. NVA was also one of my early inspirations. The American Culinary revolution in the 80's was absolutely amazing!
Food Arts? Did you ever meet Eugene Walter, friend of Fellini and Michael Batterberry, to name a couple? Wrote a book called "hints and pinches" with a foreword by John T Edge, and dictated an "as told to" bio with Katherine Clark called "Milking the Moon." I bought "h&p" at a Barnes & Noble discount stack, went back and bought the remaining 10. Has 4 recipes and some history of pineapple love.

Haagen Dasz should be one of the Main Food Groups. I just discovered GOYA chocolate pudding in individual cups...with a bit of whipped cream on top....Holy Mother of Pearl!
PS I can't understand how people can cheat themselves by dismissing those who are gay, black, asian, or just different. I guess they don't suffer from FOMO like most people.
