This remined me of The Chonchon de Lait's we used to have when I was a child in Avoylle's Parrish in Louisiana. The hogs were quite larger. Bofinger's is a gift from Heaven. I always go there when in Paris. Very sophisticated.
It was a lovely restaurant in Joburg called Marble. Duck liver parfait w kumquat jam, then Grilled Salmon tarragon and fennel beurre blanc, confit potatoes ending with mango and passion fruit Pavlova. All were enjoyed with a progressive crescendo of wines from Domaine Pegau.
Oh my these ruminations transported me to an ethereal plane populated with shellfish and fabulous cheeses. I read this after spending a pleasurable 45 minutes re-reading from New American Classics. I shared the roast beef / Chateau d’Yquem story with my daughter while bemoaning that MY family never hosted dinners quite like the ones you had with your aunt.
