Sorry. Unclear what happens with the poblanos? Once they are flattened, scraped? Just “juice”?

I still prefer Gordon's Gin which I began drinking when I lived in New Orleans. Other Gins just do not have the same "juniper" punch. The price is right too. I also began my Margherita days with Sauza tequila. No reason to change, although I sometimes use Rose's lime juice instead of fresh lime juice. As far as Nola crab gratin, as is said, "ain't nuttin better!" You may have to take out a loan to obtain great lump crabmeat. Oh, well. Such great ideas in this post, Chef J.T. Merci!

Gordon's gin was always the family favorite. I was tasted a pre-war one (1939) and it was Gordon's on steroids. Delicious.

Great. Now I can't drink gin anymore. I haven't tasted Cabernet Sauvignon since 1982 when I had a Heitz Martha's Vineyard from 1975. I can't taste it but I do remember being dazzled. :-)
