As a very young chef from a small town in Texas, we were in CA for a ACF convention and had a free night. One of my mentor chefs said go to Star in San Francisco. Someone had more influence and knowledge than I did at the time, but my wife and I were able to walk into the restaurant on a Thursday night. My world was changed for ever. Fresh ingredients, creative cooking and presentation and flavors no one had ever shown me before. That memory 40 years ago still drives my style and processes. I just found this blog. I look foreword to each posting. Thanks for taking us back through your memories and reminding me of mine.
